It is always important to acclimatize tongue and grooved (T&G) materials like flooring and wainscoting and T&G V-joint wall or ceiling cover.  Moisture content in the air varies from building to building.  By spreading your material out, the moisture content in the wood from our building will equalize to the moisture content in your home or building.

No, in our moist climate wood has to breath.  With paint on both sides, moisture is contained and the wood will rot.  By letting it breath, it can dry out.
